Extra Virgin "Intense" - Il Nobile Paolo
The most famous monocultivar of Puglia. 100% of pure and powerful Coratina
The oil is veiled and has an attractive green colour with golden shades.
The nose is intense and neat. The aroma of fresh olive is mixed with hints of green tomato in a perfectly balanced mix.
The taste is full, rich and powerful. It has a rich aroma of ripened fruit with hints of wild herbs, artichoke, green almond and leaves. The overall taste is a perfect mix of sweet, bittern and spicy. An iron fist in a velvet glove!
Serving suggestions: unbeatable served on a slice of toast bread. It can also dress raw vegetables, soups, roasted meats and legumes.

Another stunning and fine monocultivar of Puglia. 100% pure Peranzana
The oil is a bright green with golden shades.
The nose is fruity and delicate with artichokes hints.
The taste is very rich and perfectly balanced between sweet and spicy. The after taste reminds green tomatoes and almonds. It is the finest quality olive oil to be used on your table for your favourite dishes.
Serving suggestions: perfect on fish dishes, white meats, carpaccio, salads, raw and steam vegetables. The hints of basil and fresh mint make it the best companion for your delicate flavoured dishes and medium-aged cheese. Very delicate if used in pastry.

The typical Coratina type cultivated in 38 hectares of organic farming.

The nose is intense and fragrant with aroma of wild herbs.
A fruity taste sometimes slightly sharp typical of the organic cultivation. It has a bitter after taste with hints of artichokes.
Serving suggestions: recommended for the mediterranean cuisine, it can be used cold on almost any preparation.
