The idea behind Olivetus' wine selection was to have a selected stock of the finest grapes of Puglia.

We looked for regional and small producers as we want our portfolio to be as exclusive as possible. The chosen wines are difficult to find in supermarkets in the region itself, as well.

Behind each pick, there are hours of research, visits and tasting!

Primitivo IGP

Producer: Botromagno

Grape variety: 100% Primitivo
Alcohol: 14% vol.
Serving temperature: 18° - 20°

Features: Primitivo is one of Puglia's most noble and ancient grape varieties. Benedictine monks first imported it into the area in the early 19th century. It is trained exclusively to the bush (alberello) method, and its yield per hectare is by nature quite low.

Wine type: fruity dry red, cherris with medium-body tannins
Pairing: perfect with ham, medium aged cheese and lamb dishes

Primitivo BIO

Producer: Botromagno

Grape variety: 100% organic Primitivo
Alcohol: 14% vol.
Serving temperature: 18° - 20°

Features: Primitivo is one of Puglia's most noble and ancient grape varieties. Benedictine monks first imported it into the area in the early 19th century. It is trained exclusively to the bush (alberello) method, and its yield per hectare is by nature quite low.

Wine type: dry ruby red with purple rims. cherris, red mulberry with medium-body tannins
Pairing: charcuterie, medium aged cheese, lamb and game




Purpureus IGT

Producer: Cantine Ferri

Grape variety: 100% Primitivo
Alcohol: 15% vol.
Serving temperature: 18° - 20°

Features: grapes are hand-picked from low-yield 30-year old vines, situated in “Gioia del Colle” territory. The thermo-regulated fermentation is characterized by a long maceration with careful pumpovers and délestage. After a brief period in French barriques, the wine is refined in bottle for 6 months.

Wine type: fruity and spicy with notes of ripe red fruit, licorice and vanilla
Pairing: roasts, stews, game or aged cheeses




Negroamaro IGP

Producer: Botromagno

Grape variety: 100% Negroamaro
Alcohol: 14% vol.
Serving temperature: 18° - 20°

Features: although amaro is Italian for ‘bitter’, the name is thought to originate from two words meaning ‘black’: the Latin language ‘negro’ and the ancient Greek ‘maru’. From an ancient vineyard, a classic expression of one of the best apulian grapes.

Wine type: fruity dry medium bodied red, raspberry, black cherry, herbs
Pairing: charcuterie, medium-aged cheese, grilled meat, strong flavoured pasta and game




Negroamaro Teresa Manara IGT

Producer: Cantele

Grape variety: 100% Negroamaro
Alcohol: 14% vol.
Serving temperature: 18°

Features: after being crushed, the must is macerated with skin contact for 15 days. Fermentation is carried out at 26° C. Once malolactic fermentation is completed, the wine is aged in barrique for approximately 12 months.

Wine type: bold and herbal dry red, black cherry, spicy with moderate tannins
Pairing: intensely flavored and structured cuisine.Game and ripe, aged cheeses.




Nero di Troia IGP

Producer: Botromagno

Grape variety: 100% Nero di Troia
Alcohol: 13,5% vol.
Serving temperature: 18° - 20°

Features: the nero di Troia grape is one of Puglia's oldest and most noble varieties. Used in decades past as a blending grape, it has recently become a star on its own as a monovarietal wine, exhibiting aromas and flavours of previously unsuspected richness and complexity. Dense, fine-grained tannins and ease of pairing with food. A wine for wine-lovers.

Wine type: full bodied, black fruits and blueberries, generous and dense tannins
Pairing: charcuterie, medium-aged cheeses, barbecued lamb, wild game.




Salice Salentino DOP

Producer: Botromagno

Grape variety: 80% Negroamaro, 20% Malvasia nera
Alcohol: 14% vol.
Serving temperature: 15° - 18°

Features: Salice Salentino is one of Puglia's longest-established and most prestigious denominations. This wine, sourced from grapes grown in traditional bush-trained vineyards, transmits to the fullest degree Salento's sun and distinctive climate, of which it has long been a respected icon. It is a hymn to the classic character of Puglia, a wine with a unique and unmistakable personality, capable of complementing any dish.

Wine type: bold and fruity dry red, spicy with generous tannins
Pairing: cold cuts, aged cheeses, grilled meats and game




Amativo IGT

Producer: Cantele

Grape variety: 60% Primitivo, 40% Negroamaro
Alcohol: 14,5% vol.
Serving temperature: 18°

Features: After being destemmed and crushed, the must is macerated with skin contact for 12-15 days during which délestage is employed on a daily basis. After fermentation the wine is aged in barriques for 12 months.

Wine type: ruby red, notes of rose and violet, rich and balanced flavour
Pairing: well aged cheeses, smoked, spicy cured meats. Great match for a good cigar




5 Uve Rosse IGP

Producer: Botromagno

Grape variety: Primitivo, Nero di Troia, Aglianico, Merlot, Cabernet
Alcohol: 14% vol.
Serving temperature: 18° - 20°

Features: a blend of equal parts of five red grape varieties, very different from each other in tradition, vine training system, and vineyard elevation, with the goal of crafting an unusual wine, produced almost by chance, to show that tradition and innovation can go hand in hand in perfect harmony.

Wine type: fruity and aromatic, with a well-balanced acidity and velvety texture
Pairing: cold cuts, aged cheeses, grilled meats and game




Pier delle Vigne IGP

Producer: Botromagno

Grape variety: 60% Aglianico, 40% Montepulciano
Alcohol: 14% vol.
Serving temperature: 18° - 20°

Features: its namesake, Pier delle Vigne, was the right-hand man of Frederik the II and the one who introduced the first red-wine grapes into this area. It's a wine that has spent 24 months in a wooden barrel and at least 12 months in a bottle. It is very elegant and a classic "meditation wine" that can be easily sipped by itself.

Pairing: aged cheeses, roasts and marinades




Dedicato DOP

Producer: Botromagno

Grape variety: 100% Primitivo from Gioia del Colle
Alcohol: 14% vol.
Serving temperature: 18° - 20°

Features: this award-winning wine is the most exclusive we have selected! It is aged for 2 years in wooden barrels and 1 year minimum in bottle. Each piece is numbered as the production is limited. One of our clients named it the "Amarone from Puglia"!

Wine type: bold and complex red, velvety, fruity with perfectly balanced tannins
