The idea behind Olivetus' wine selection was to have a selected stock of the finest grapes of Puglia.

We looked for regional and small producers as we want our portfolio to be as exclusive as possible. The chosen wines are difficult to find in supermarkets in the region itself, as well.

Behind each pick, there are hours of research, visits and tasting!

Gravina BIO DOP

Producer: Botromagno

Grape variety: 60% Greco, 40% Malvasia
Alcohol: 12,5% vol.
Serving temperature: 8° - 10°

Features: It's one of the most ancient italian grapes. Brought to Italy from Asia has found a great habitat in Puglia. Colour is sparkling yellow with green highlights. The wine gained DOP status in 1983 and is currently produced only by Botromagno.

Wine type: Very fragrant and fruity, apple, peach, apricot and pineapple bouquet
Pairing: Oysters, raw fish and shellfish, spicy soups, Asian cuisine, light meat

Chardonnay IGP

Producer: Botromagno

Grape variety: 100% Chardonnay
Alcohol: 12,5% vol.
Serving temperature: 8° - 10°

Features: One of the international variety that best adapted to the Puglia's climate. It expresses a freshness and elegance that sets it apart from the typical Chardonnay southern region.

Wine type: Fresh wine, savory, almost salty
Pairing: Seafood, oysters and shellfish




Fiano BIO IGT

Producer: Botromagno

Grape variety: 100% Fiano
Alcohol: 14% vol.
Serving temperature: 11° - 13°

Features: Fiano is an ancient grape of Roman origin. Planted at an elevation of 600 metres, it enjoys a perfect north-south aspect. The chalky, low-nutrient soils contain generous pebble and gravel, perfectly suited for this vineyard.

Wine type: Very rich and round with fresh acidity in background, very long finish
Pairing: Seafood, any type of fish, oysters and light meats




Greco IGT

Producer: Botromagno

Grape variety: 100% Greco
Alcohol: 12,5% vol.
Serving temperature: 12°

Features: It is an unique clone of the Greco grape which has been referred as "mascolino". Deep yellow colour with a very aromatic and fruity taste. With a balanced acidity and a very long progression is an easy wine to appreciate.

Wine type: Bold and herbal dry red, black cherry, spicy with moderate tannins
Pairing: Seafood and light meat dishes

Gravina "Poggio al Bosco" DOC

Producer: Botromagno

Grape variety: 60% Greco, 40% Malvasia
Alcohol: 13% vol.
Serving temperature: 12°

Features: this award-winning white is a distinctive cru wine produced from the grapes of a single vineyard, strategically planted to enjoy wide day-night thermal ranges and excellent ventilation. The plant material came from a 10-year project of clonal selection, in collaboration with the University of Crop Science of Basilicata. The soils are Bordeaux type, with abundant pebble and gravel.

Wine type: fruity and aromatic with a judicious acidity. Aroma of apple, peach, honey
Pairing: oysters, raw fish and shellfish, spicy soups, Asian cuisine, light meats




DUO Bianco

Producer: Cantine Ferri

Grape variety: 70% Chardonnay, 30% Garganega
Alcohol: 13% vol.
Serving temperature: 12° - 14°

Features: The DUO is a wonderful combination of two grapes having different personality but complementing each other perfectly. Fermentation occurs in stainless steel before being refined in bottle.

Wine type: soft and well balanced, has spicy floral notes with hints of exotic fruits
Pairing: fish dishes in general, seafood and white meat




Chardonnay Teresamanara IGT

Producer: Cantele

Grape variety: 100% Chardonnay
Alcohol: 13% vol.
Serving temperature: 14°

Features: after being crushed and gently pressed, the must is cooled to 10° C to facilitate natural fining. The alcoholic fermentation is carried out in stainless-steel first and barriques after. Aged in barriques after for at least 8 months.

Wine type: intense with golden and green tone. Buttery with spicy aromas, exotic fruits
Pairing: from intensely flavored seafood to vegetables and white meats and cheeses




Terre di Federico IGT

Producer: Botromagno

Grape variety: 100% Malvasia
Alcohol: 11,5% vol.
Serving temperature: 10°

Features: A sparkling, slightly sweet wine, in the best tradition of Gravina.

Wine type: slightly sweet wine, fresh and fruity
Pairing: great with pastries and cakes




Rubeo IGP

Producer: Cantine Ferri

Grape variety: 50% Nero di Troia, 50% Bombino nero
Alcohol: 12,5% vol.
Serving temperature: 12° - 14°

Features: Criomaceration at a temperature of 5° C. Soft pressing and extraction of the must after 5 hours, then controlled fermentation at a temperature of 14° C in stainless steel fermenting tasks. The RUBEO is refined on thin dregs for 3 months with some periodic batonage.

Wine type: fresh and fruity, apple and strawberry are very persistent
Pairing: sushi and sashimi, fish, seafood and white meats




Silvium IGP

Producer: Botromagno

Grape variety: 100% Montepulciano
Alcohol: 12,5% vol.
Serving temperature: 13°

Features: the Montepulciano grape variety has been grown in the area since 1230. This is a rosé with a deep coloration and a distinctive personality, one of Puglia's iconic wines; these wines, complicated to make, have spread Puglia's fame throughout the globe.

Wine type: rich and complex, an acid that gives an appealing tanginess
Pairing: antipasti, charcuterie, fresh cheeses, tomato soups and light meats




Roseé di Lulù IGP

Producer: Botromagno

Grape variety: 100% Uva di Troia
Alcohol: 14% vol.
Serving temperature: 14°

Features: dedicated to the daughter Lucia Pia, affectionately called Lulù. A very old vineyard, located at 700 metres in the highest point of Gravina. A very distinctive terroir, consisting of sandy soils of extremely low fertility; the vines must suffer to survive here, and they yield clusters that are few but extraordinarily rich. One of the iconic wines of Puglia, the region that was first to achieve international success for this difficult to make wine style.

Wine type: deep pink in appearance, firmly structured with an unmistakable personality
Pairing: salami, medium-aged cheese, lamb




Gravisano - Passito - IGP

Producer: Botromagno

Grape variety: 100% Malvasia passita
Alcohol: 14,5% vol.
Serving temperature: 16°

Features: a passito wine that plays an intimate role in the history of the area. Up to a few centuries ago among the vinerows of our vineyards a different grape grew as well, probably a clone of greco,which ripened early and dried right on the vine. The farmers let nothing go to waste, and so these semi-dried grapes were fermented separately; they yielded just a few litres of sweet wine, which was then offered to special guests during festivals. The grape was known in dialect as gravisano. This legendary grape has disappeared but research showed that by dryin the malvasia grape on reed mats, it will give a wonderfully-smooth, fragrant nectar, sweet but never cloying. First produced in 1992, it now plays an important role in the world of sweet wines.

Wine type: generous, rich aromas of raisins, it shows beautiful balance between sweetness and acidity
Pairing: traditional almond or almond paste biscuits, pastery, soft cheeses
